when couponing made them only $0.11 each (these often go on sale with coupons for free). In an effort to begin using them, I searched for an olive oil pasta sauce recipe using ingredients I had on hand, found this and made it tonight.
- 1/2 cup extra virgin olive oil
- 3 garlic cloves, minced
- 1/4 cup pasta cooking water
- 1/2 teaspoon crushed red pepper flakes
- 1 1/4 teaspoons kosher salt
- 1 cup fresh flat-leaf parsley, roughly chopped Prep Time: 5 mins
Total Time: 10 mins
- 1 Heat the oil in a large saucepan over medium heat. Add the garlic and cook, stirring, for 30 seconds, making sure it doesn't brown. Add the pasta water, red pepper, salt, and parsley and bring to a boil. Toss with cooked pasta.
I added some grilled boneless, skinless chicken tenders that I marinated and tossed on the Foreman grill, and we had a pear gorgonzola salad as a side.
It was quick, easy, cheap, relatively healthy, and yummy!
I was able to get my first prescribed prenatal massage having only to pay my insurance co-payment today. It was absolutely delightful and it felt incredible to have so much attention paid to an area that has been causing so much discomfort. The place I went to is actually a physical therapy office that also specializes in treating women prenatally. The expertise showed and my insurance company/midwife have allowed up to one her week until I have the baby. I'm not sure time or finances will allow for that because the co-pay is still a little high, but it's so good to know I have it as an as needed option until our precious baby girl is here.
My mom was also just here the past couple of days to visit, help me out and keep me company. I always enjoy her visits. We have great girl time and Elyse just loves when she comes. We all went shopping, to dinner, watched a movie, and I was even able to run a few errands by myself. I forget how nice that is sometimes. I'm so grateful she's not more than an hour away and willing to come when she is able.
Time for this mommy to put her feet up though.
